MARTINI MONDAY – (enjoy the first evening of the
week with a cool cocktail and a easy snack!)

Hey people do you have lots of hard boiled eggs? I’m thinking you doooooo…So how about we make a few Bloody Mary’s and some egg salad samiches? Sounds like a yummy combo package? I think it really does. So let’s get crackin’. Get it – crackin? Ok shush, what else do I have to do but crack jokes? Bwahahaha got ya again didn’t I?

Sundried Tomato Bloody Mary
3 oz. Tomato juice 
3 oz. V-8 juice 
1 1/2 oz. vodka infused with sun dried tomatoes 
Pinch black pepper 
Pinch celery salt 
Dash grated horseradish 
Dash lemon juice 
Dash Tabasco sauce 

Put all ingredients into a large, chilled highball glass, add ice and mix well. To infuse vodka used in this drink, pour 4 oz. of vodka into a glass container with a tight-fitting top. Add four sun-dried tomatoes, cover, and let stand for at least two days. When ready to use, strain and discard tomatoes. If you age this infusion longer, after a week replace old tomatoes with fresh ones. Serves 1.

Sundried Tomato Bloody Mary

Ingredients

  • 1/2 medium red onion, chopped
  • 12 large eggs
  • 1 stalk celery (with leaves), chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons whole-grain mustard
  • 1 tablespoons plus 1 teaspoon freshly squeezed lemon juice
  • 2 teaspoons kosher salt
  • Freshly ground black pepper
  • Serving suggestions: 8 slices country-style sourdough bread, sliced tomatoes, or salad greens

Directions

In a small bowl, soak the onions in cold water, for 15 minutes. Drain.

Meanwhile, in a large saucepan, with a tight-fitting lid, place the eggs and cover with cold water by 1 inch. Bring to a boil and cook for 1 minute. Cover the eggs, remove from the heat, and set aside for 8 minutes. Drain the water from the pan and cool the eggs in the pan under cold running water. Peel the eggs and cut into sixths.

In a large bowl, mix together the onion, celery, mayonnaise, dill, mustard, lemon juice, and salt.

Add the eggs to the mayo mixture and gently mix them together. Season with pepper to taste. Use in sandwiches, with lettuce and tomatoes, or in a salad.
