MARTINI MONDAY – (enjoy the first evening of the
week with a cool cocktail and a easy snack!)


My girlfriend Malibu Barbie said she needs to persuade her man so that we can go out dancing to Libido Funk Circus on Saturday so how about a tropical cocktail? After one of these babies, you can get people to do just about anything for you. Believe me goddesses….especially if he drinks 12 of them!


(makes 12 cocktails; recipe can be halved, too)

3 cups pineapple juice
3 cups pineapple vodka or regular vodka
6-7 tablespoons fresh-squeezed lime juice
Lime wedges
About 1 1/2 cups sugar
About 5 kaffir lime leaves or some fresh mint leaves
Fresh pineapple, cored, and cut into small wedges

In a pitcher, mix pineapple juice, pineapple vodka, lime juice, and kaffir lime leaves or mint leaves. Use a wooden spoon to bruise the herbs a little so they better infuse into the cocktail mixture. Refrigerate for a couple of hours, until very cold.

Rub rims of martini glasses with lime wedge. Pour sugar into a plate; dip rims of martini glasses into the sugar. Fill a shaker with ice. Add some of the cocktail mixture. Shake vigorously, then strain into martini glasses. Garnish edge of each glass with a wedge of fresh pineapple.

Now serve up some cookies and he’s all yours….


½ cup softened butter
¾ cup white sugar
1 ½ cup flour
½ tsp salt
½ tsp baking soda
1 larg egg
1 tsp vanilla extract
1 tsp rum extract
2 tsp lemon peel
½ c sweetened coconut flakes
1 cup pineapple tidbits in juice, 1/3 of liquid if can set aside


Preheat oven to 375F.

In a medium-sized bowl, cream together butter and sugar. Stir in egg, vanilla, rum, lemon peel, pineapple w/reserved liquid and coconut. In a separate bowl, sift together flour, baking soda, and salt. Gently fold into wet mixture. Drop by heaping teaspoonfuls onto an ungreased cookie sheet about 2 inches apart.

Bake 9 minutes or until bottoms turn light golden brown; tops should still be light. Transfer to wire cooling racks until completely cool.
